Baking Cupcakes

Hello my lovelies,

How are you today? So this morning I decided that I wanted to do some baking since I haven't done any in a while and I want to start doing more of this since I got some books for Christmas! 

I started with the basic cupcakes today just to get me into the swing of things again. So the recipe is 

- 30grams of Cocoa Powder (I used Cadburys)
- 2 tablespoons of Hot Water
- 87.5grams of unsalted butter
- 87.5 grams caster sugar
- 60g of self-raising flour 
- 1 level teaspoon of baking powder
- 2 eggs

  • Preheat your oven to 180° and get all of your ingredients ready. 
  • Once you have your ingredients ready mix together the Cocoa Powder and hot water until a paste is created. 
  • Combine the rest of the ingredients until all mixed well together in a creamy cake mix. 
  • Layout your cake cases in a baking tray and fill until a quarter or just below half full. (I messed up here and put way too much in!)
  • Once your oven is preheated to 180° place the cakes into the oven for 20-25 minutes until risen
  • To test if they are done you can simply place a knife in the center and if the knife when removed is clean they are finished!

I haven't decorated mine due to the fact that there is enough sugar in them anyway, however, I find buttercream icing is the best with these style of chocolate cupcakes. 

Simple buttercream icing recipe 
- 50grams of melted butter (I love dairy milk)
- 100grams of unsalted butter
- 200grams of icing sugar

Mix all together until a creamy and fluffy texture is created wait until cakes have fully cooled until applying icing. 

I really enjoyed making these and getting back into the swing of baking again! I have missed it. Admittedly not a great first effort but hey I will get back into it.
